Spicy Garlic Prawns recipe

Garlic has a natural affinity with prawns; enhancing their subtle flavour without being overpowering. You can use other vegetables such as aubergine, broccoli or cauliflower instead of the courgettes.

1. Cut the courgettes into sticks about 3in (80mm) long and 1/4 in (5 mm) thick. Peel and crush the garlic, de-seed and finely chop the chilli. Heat the oil in a pan and gently fry the garlic, grated ginger and chilli for about 3 minutes.
2. De-seed and roughly chop the tomatoes and add them to the pan. Increase the heat
and cook for a further 4 minutes, stirring frequently.
3. Add all the remaining ingredients to the pan and cook for 2 minutes, stirring occasionally.
4. Season to taste and serve as a hot starter or light snack.
5. Serve the dish piping hot straight from the pan, if you wish. Take care not to overcook the ingredients.
