Cajun Creole Cod recipe

This quick and simple recipe is a medley of two delicious cuisines. Cajun and Creole cookery reflect the French and Spanish influences that the settlers had on local produce in New Orleans and the West Indies. This dish goes well with nutty brown rice and a crisp green salad, or a seasonal green vegetable.

1. Crush the peppercorns, allspice, coriander, chillies and garlic in a mortar with a pestle. Rub both sides of each fish steak with this mixture, then cover the steaks and leave them to marinate in the refrigerator for at least 30 minutes.
2. Preheat a low oven and warm a serving platter. Heat the oil and butter in a pan until the mixture foams.
3. Add the cod steaks and cook over a moderate heat for 5 minutes on each side, pressing down firmly with a fish slice occasionally, until the centre of each steak is opaque.
4. Reserving the rest of the ingredients in the pan, transfer the fish to the warmed serving platter, then cover and keep hot.
5. Return the pan to a high heat. Add the lime juice and stir until bubbling. Pour this mixture over the cod steaks. Garnish with the lime wedges and coriander sprigs and serve immediately.
