1. Preheat the oven to 180°C/160°C fan oven/Gas Mark 4. Butter four ramekins.
2. Place one tomato in each of the four ramekins and season. Carefully break an egg on top of each, then drizzle 1 tablespoon of double cream over each egg. Bake in the oven for 15 to 18 minutes.The eggs will continue to cook once they have been taken out of the oven.
3. Leave to stand for 2 minutes before serving.
