400 g can cannellini beans, drained and rinsed
2 garlic cloves
1 tbsp olive oil
2 tsp lemon juice
1 tsp sea salt
fresh basil leaves handful, torn
dark rye bread and mixed salad dressed with olive oil vinaigrette to serve
method
1. Put the beans, garlic, olive oil, lemon juice, salt and pepper in a food processor. Whiz to make a rough paste, then stir in the basil leaves.
2. Serve with dark rye bread and a large mixed salad dressed with olive oil vinaigrette.
