Minted Peas and Beans

ingredients

serves: 4-6
450 g (1 lb) shelled fresh peas
225 g (8 oz) French beans
25 g (1 oz) butter
1 bunch spring onions, trimmed and thickly sliced
225 g (8 oz) courgettes, cut into wedges
200 ml (7 fl oz) creme fraiche
3 tbsp fresh mint, roughly chopped
1 tsp sugar

method

1. Cook the peas and beans in a pan of boiling salted water for 5 minutes, or until tender, then drain.

2. Heat the butter in a frying pan and saute the spring onions and courgettes. Add the creme fraiche and bring to the boil, then lower the heat and simmer for 2 minutes.

3. Mix in the peas and beans, mint and sugar, then season with salt and black pepper, to serve.
