Jerseys in a Parcel with Lemon and Rosemary recipe

700 g (1 1/2 lb) Jersey Royals, lightly scrubbed
2 tbsp extra-virgin olive oil
1 tsp sea salt roughly chopped
2 tsp fresh rosemary
1 small lemon, rind finely grated

method
1. Preheat the oven to 200°C/180°C fan oven/Gas Mark 6. Place the potatoes in a bowl with the olive oil, and salt and pepper to season, then add the rosemary.Toss together, turn out on to a large sheet of oiled foil on a baking sheet and scatter over the lemon rind.
2. Fold the foil over to make a parcel and bake for 40 to 50 minutes or until tender.The potatoes can also be cooked on a barbecue - allow about 25 to 30 minutes. Unwrap the parcel at the table to serve.
