1. Preheat the oven to 220°C/200°C fan oven/Gas Mark 7. Place a baking sheet in the oven to heat. Roll out the pastry to a thickness of 1 cm (1/2 in) and cut into 5 cm (2 in) squares. Scatter the stilton and parmesan, cayenne pepper, poppy seeds and mustard seeds over the pastry.
2. Place the bites on the hot baking sheet and bake for 10 minutes or until golden. Leave for a few minutes, then transfer to a serving plate.
