Anchovy Rolls

ingredients

14 thin slices white bread
125 g (4 oz) butter, softened
2 tbsp Dijon mustard
4 tbsp parmesan, finely grated
50 g can anchovies in olive oil, drained
olive oil for drizzling

method

1. Preheat the oven to 200°C/180°C fan oven/Gas Mark 6. Remove the crusts and butter the bread. Spread each slice with mustard, then sprinkle with half the parmesan and place one anchovy fillet on each side of each slice. Roll the bread up tightly and cut in half.

2. Pack the rolls on to a baking sheet, seam-side down, drizzle with oil and sprinkle with the remaining cheese and black pepper. Cook for 15 to 20 minutes until golden. Serve warm.
