1. Preheat the oven to 200°C/180°C fan oven/Gas Mark 6. Grease the Madeleine tins. Using an electric whisk, beat the eggs and sugar together for about 8 minutes until thick, then stir in the vanilla extract. Quickly, but gently, fold in the flour, baking powder and apple followed by the melted butter, making sure the butter does not settle at the bottom of the bowl.
2. Spoon the mixture into the Madeleine tins. Cook for 8 to 10 minutes or until golden, then remove from the tins and cool on a wire rack. To serve, dust with icing sugar.
