4 large potatoes boiled and sliced
4 medium eggs, hard boiled (cooked) and shelled
1 medium onion, finely sliced
2/3 cup (150 ml) 1/4 pt mayonnaise
Sprigs of parsley to garnish
method
1. Arrange the potato slices in a suitable serving dish.
2. Quarter the eggs and place on top of the potatoes.
3. Scatter the onion slices over, dress with mayonnaise and garnish with parsley.
