1. Preheat the oven to 200°C/180°C fan oven/Gas Mark 6. Place the flour in a food processor with the paprika and butter. Whiz for a few seconds until the mixture resembles breadcrumbs. Add the cheese and whiz again to mix.
2. With the motor running add enough cold water to mix to a soft dough (about 2 to 3 tablespoons).
3. Divide the dough into 16 pieces and roll each one into a sausage shape about 13 cm (5 in) long. Carefully twist each one into the shape of a knot and place on a baking sheet. Repeat with the remaining dough. Brush each one with a little milk and sprinkle with seeds, if using. Bake for 10 to 15 minutes or until crisp and pale golden. Allow to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
