Tagliatelle alla Carbonara

Preparation time 10 - 15 minutes,
Cooking time 20 - 25 minutes,
Calories 700 per portion

ingredients

serves 4
450 g (1 lb) tagliatelle
salt and pepper
100 g (4 oz) smoked rindless bacon, diced
2 tablespoons oil or 25 g (1 oz) butter
2 eggs, lightly beaten
150 ml (1/4 pint) single cream
2 tablespoons chopped parsley
50 g (2 oz) Parmesan cheese, grated

method

1. Cook the tagliatelle in a large saucepan of boiling salted water for 10 - 12 minutes until just tender. Drain and place in a serving dish. Keep warm.

2. Fry the bacon in the oil or butter until crispy, reduce the heat, then add the eggs, cream, parsley, seasoning to taste and half of the Parmesan.

3. Heat gently, without boiling, stirring. Pour the sauce over the pasta, then sprinkle the remaining Parmesan cheese on top and serve immediately.

For a really quick and easy pasta dish, stir 100 g (4 oz) cream cheese with garlic and herbs into the hot drained pasta.
