1 lb (450 g) mussels, cooked and shelled
8 oz (225 g) potatoes, cookedN and diced
175 g (6 oz) carrots, cooked and diced
1 tbsp olive oil
3 tbsp wine vinegar
salt and freshly ground black pepper to season
method
1. Mix together the mussels, potatoes and carrots and arrange on a suitable serving dish.
2. Thoroughly blend the oil, vinegar and seasoning and pour over the salad.
