1. Cook the potatoes in boiling salted water until tender.
2. Drain, then mash and add the milk, bouquet garni and season to taste.
3. In the meantime, open the oysters and reserve their juices.
4. Dice the belly of pork and fry gently until just cooked.
5. Add the pork, oysters and their juices to the potatoes and milk and bring almost to boiling point.
6. Gently simmer for 5 minutes, add the butter and serve.
