Goulash Soup with Potatoes (Gulaschsuppe)

ingredients

serves 6
110 g (4 oz) streaky bacon
1 medium onion, chopped
8 oz (225 g) braising steak, diced
2 tsp paprika
1/4 tsp marjoram
1 clove garlic, crushed
1/3 cup (50 g) cornflour
1.15 litre (2 pt) beef stock
2 large potatoes, cooked and diced

method

1. Chop bacon and gently fry with the chopped onion.

2. When a nice golden colour, add the diced steak and allow to brown all over, stirring constantly.

3. Gradually stir in the paprika, marjoram and crushed garlic.

4. Take off the heat and add the flour.

5. Stir thoroughly and then slowly stir in the stock.

6. Return to heat and bring to a gentle simmer.

7. Cook on simmer for 30 minutes.

8. Now add the diced potato and heat through.
