Jam Tart #2

ingredients

serves 6
4 - 6 tbsp firm jam
beaten egg for glazing

SHORT CRUST PASTRY
150 g (5 oz) plain flour
1/2 tsp salt
65 g (2 1/2 oz) margarine (or half butter, half lard)
flour for rolling out

method

1. Set the oven at 220°C (425°F) gas mark 7.

2. To make the pastry, sift the flour and salt into a bowl, then rub in the margarine until the mixture resembles fine breadcrumbs. Add enough cold water to make a stiff dough.

3. Press the dough together lightly.

4. Roll out the pastry on a lightly floured surface and use to line a 20 cm (8 inch) pie plate.

5. Decorate the edge with any trimmings.

6. Fill with jam and glaze the uncovered pastry with beaten egg.

7. Bake for 15 minutes or until the pastry is cooked. Serve hot or cold.
