1. Roll out the pastry on a floured work surface and use to line twelve 5 cm (2 inch) patty tins.
2. Put the cheese into a bowl, add the milk or fresh cream, egg, parsley and seasoning. Whisk lightly together with a fork.
3. Using a spoon, divide the mixture between the patty tins. Bake in the oven at 180°C (350°F) gas mark 4 for 20 - 25 minutes. Makes 12
