2 cups (225 g) self raising (self rising) flour

method
1. Sift together the flour and cinnamon and rub in the butter.
2. Add the sugar, potato and finely sliced apple.
3. Stir in the beaten eggs to make a fairly soft consistency using a little milk if necessary.
4. Place the mixture in a well greased 20 cm (8 in) cake tin and bake at Gas mark 5, 375°F (190°C) for 1 1/4 hours.
5. Allow to cool slightly in the tin, remove and dredge with icing sugar.
