2 large baked potatoes
3/4 cup (90 g) mushrooms
1 medium onion, diced
8 oz (225 g) beef, in thin strips
1 tbsp horseradish sauce
salt and pepper
Parsley for garnish
method
1. Halve the baked potatoes and scoop out the flesh.
2. Lightly fry the mushrooms and diced onion and keep hot while you fry the beef until cooked. Mix the potato flesh with the beef, mushrooms and onion, then stir in the horseradish sauce and season to taste.
3. Pile back into the skins. Garnish with the parsley.
