Steamed Rich Pudding

ingredients

serves 6
175 g (6 oz) grated raw potato
175 g (6 oz) grated raw carrot
3/4 cup + 2 Tbls (175 g) caster sugar (superfine granulated)
110 g (4 oz) shredded suet
1 cup (110 g) self raising (self rising) flour
3 medium eggs, beaten
3/4 tsp grated nutmeg

method

1. Mix all ingredients thoroughly, put into a lightly greased 1.15 litre (2 pt) basin,

2. Cover and steam for 2 1/2 - 3 hours, taking care to top up the steamer with boiling water when necessary.
