1. Wash the raisins thoroughly in lukewarm water, drain and soak in the apple liqueur or juice in a small basin.
2. Sort the spinach and wash it several times in lukewarm water. Bring the water to the boil with a pinch of salt, in the
spinach. Boil for 3 minutes, drain well in a sieve and press out excess water.
3. Finely dice the onion.
4. Melt 50 g (2 oz) of the butter in a large frying pan, fry the onions until transparent, stirring frequently, then add the spinach, loosening it with 2 forks.
5. Add the raisins and the soaking liquid. Stir well and season with salt, pepper and nutmeg. Steam the spinach for 5 minutes.
6. Coarsely chop the pistachios. Heat the remaining butter, stir in the pistachios or almonds, then sprinkle them over the spinach.
Serve with: pork chops or poached fish fillets and steamed potatoes.
