1. Heat the oil in a large frying pan and add the onion, garlic and ginger Cook over a low heat for 5 minutes, stirring, until the onion softens but doesn't brown.
2. Turn up the heat and add the mince, chilli flakes, carrots, courgettes, tomato puree and soy sauce. Stir fry for 5 minutes until piping hot. If you wish to freeze this, do it now.
3. To serve, spoon a little of the chilli mince mixture on to the centre of each lettuce leaf and wrap like a parcel.
