1. Arrange the tuna strips in a shallow dish. Mix together the Teriyaki sauce, garlic and tomato puree and pour it over the tuna.Toss the tuna in the marinade and set aside. Leave it to marinate while you prepare the potatoes.
2. Cook the potatoes in lightly salted, boiling water for 10 minutes until tender Add the mange tout peas to the pan and cook for a further 2 minutes. Drain well.
3. Spray a frying pan with low fat cooking spray. Drain the tuna strips, reserving the marinade, and add them to the pan. Cook the tuna over a high heat for 2 minutes, and then add the potatoes, mange tout peas and orange segments. Carefully stir fry for a further 2 minutes, taking care not to break up the tuna.
4. Divide the stir fry mixture between two serving plates. Add the marinade to the pan with the orange juice. Allow the liquid to bubble and then drizzle this sauce over the tuna mix. Serve at once.
