method
1. Put the honey, orange juice and orange rind into a saucepan and stir over a low heat until the honey has melted.
2. Add the blueberries and simmer for 10 minutes, or until the fruit is tender. Puree the fruit and juice in a liquidizer, or rub them through a sieve.
3. Stir a little of the puree into the flour to make a smooth paste. Stir in the remaining puree, return it to the pan and stir over a medium heat until the puree thickens.
4. Simmer for 3 minutes. Cool slightly, then divide the fruit puree between four individual serving glasses and chill for 2 hours.
5. Stir the yogurt through the blueberry puree and decorate with mint sprigs. Serve chilled.
Blueberries are known by a variety of other names including bilberries and whinberries in different parts of Britain. The fruit puree freezes well.
