Savoury Minced Beef and Tomato Filling

ingredients

serves 4
2 large baked potatoes
110 g (4 oz) minced beef
1 medium onion
1 tbsp tomato puree (paste)
salt and pepper
fresh tomato slices for garnish

method

1. Halve the baked potatoes and scoop out the flesh.

2. Cook together the minced beef, onion and tomato puree and season with the salt and pepper.

3. When thoroughly cooked, mix with the potato flesh and pile back into the potato skins.

4. Garnish with fresh tomato slices.
