method
1. Cut potatoes into about 1 cm (1/2 in) squares.
2. Slice orange and lemon as thinly as possible and arrange potatoes and fruit in layers in a buttered ovenproof dish.
3. Sprinkle with sugar and dab small pieces of butter all over.
4. Add the water, then cover with a lid or foil and bake in the oven Gas mark 4, 350°F (180°C) for 1 hour.
5. Dust the top with the cinnamon and continue baking uncovered for a further 15 minutes.
