Special Sausage Salad

ingredients

serves 4
1 cos lettuce
1/2 cucumber
1 bunch radishes
2 tomatoes
10 cocktail onions
8 small bottled corn cobs or 1 x (425 g (15 oz) can baby sweetcorn
225 g (8 oz) ham sausage, sliced
100 ml (4 fl oz) soured cream
1 tablespoon lemon juice
1 teaspoon soy sauce
1/2 teaspoon celery salt
pinch of sugar
1 teaspoon green peppercorns

method

1. Separate, wash and dry the lettuce. Wash, dry and thinly slice the cucumber and radishes.

2. Cut the tomatoes into wedges. Cover a salad dish with lettuce and top with the cucumber, radishes, tomatoes, onions and corncobs.

3. Skin the sliced sausage, cut to the centre of each slice, roll into a cone and arrange the sausage on the salad.

4. Beat the soured cream with the remaining ingredients and pour the dressing over the salad.
