1 cucumber
salt
for the dressing
1 tablespoon clear honey
1 tablespoon water
2 tablespoons chopped dill or fennel
4 tablespoons white wine vinegar
method
1. Slice the cucumber very thinly and place in a colander. Sprinkle liberally with salt and leave to drain for 30 minutes.
2. Meanwhile, mix the dressing ingredients together in a screw-topped jar. Shake well and leave for 30 minutes.
3. Dry the cucumber thoroughly on absorbent kitchen paper. Arrange the cucumber slices overlapping in a shallow dish and pour over the dressing.
Cucumber salad is the perfect choice to serve with either hot or cold fish. The addition of either dill or fennel also makes the dressing particularly
suitable as an accompaniment to a fish dish.
