8 oz (225 g) cooked, sieved potatoes
3 oz (75 g) chopped, stoned (seeded) dates
1 medium egg, beaten
2 tbls (25 g) caster sugar (superfine granulated)
1/2 stick (2 oz) 50 g butter, melted
1 orange, rind grated, plus juice
Pinch salt
method
1. Mix all ingredients thoroughly, adding sufficient orange juice to make a soft consistency.
2. Put pudding mixture into a lightly greased 900 ml (1 1/2 pt) basin, cover and steam for 1 1/2 hours, adding boiling water to the pan of the steamer when necessary.
