1. Put the cheese into a small heavy based pan. Add the wine and stir over a low heat until the cheese has melted. Remove from the heat. Add the egg yolks to the milk and gradually stir into the cheese. Beat in the seasoning. Return to the heat and cook gently, stirring all the time until the mixture thickens.
2. Adjust the seasoning and spoon on to the slices of toast, pop under a hot grill to glaze golden brown. Serve as soon as possible.
