8 oz (225 g) rice
110 g (4 oz) potatoes, cooked
4 oz (100 g) lean ham, minced
2 tbsp (1 oz) 25 g butter butter melted
1 tsp parsley, chopped
Salt and pepper to taste
2 medium egg yolks
3 tbsp (25 g) flour
Oil for frying
method
1. Cook the rice until it is dry and fluffy.
2. Put the potatoes through a ricer, or sieve.
3. Mix with the rice, minced ham, melted butter, parsley and seasoning.
4. Bind all ingredients together with the egg yolks.
5. Using floured hands, shape the mixture into small balls and fry in deep hot fat until nicely browned.
