25 g (1 oz) butter
1 shallot or small onion, skinned and chopped
1 garlic clove, skinned and finely chopped
6 courgettes, trimmed and thickly sliced
450 g (1 lb) tomatoes, skinned and sliced
100 g (4 oz) cheddar cheese, grated
salt and freshly ground pepper
1. Melt the butter and gently fry the shallot or onion and garlic for 2 minutes, until soft. Add the courgettes and fry for 10 minutes, turning frequently, until tender. Add the tomatoes and cook for a few minutes more, until the tomatoes are slightly pulpy.
2. Arrange the vegetables in layers with the grated cheese in an ovenproof dish, seasoning each vegetable layer with salt and pepper and finishing with a layer of cheese. Cook in the oven at 180°C (350°F) mark 4 for 30 40 minutes until the top is golden.
