method
1. Peel potatoes and pass through a sieve.
2. Separate the eggs and add the yolks, sugar, melted butter, milk, salt and pepper to the sieved potatoes and mix well.
3. Beat the egg whites until stiff but not too dry, and fold into the potato mixture.
4. Pour into a buttered pie dish and bake in the oven Gas mark 4, 350°F (180°C) for about 1 hour until nicely browned on top.
5. Serve with custard or whipped cream
