2 onions, skinned and sliced
3 tomatoes, skinned and sliced
100 g (4 oz) mushrooms, wiped and sliced
4 lamb chops, trimmed of fat
butter or margarine
salt and freshly ground pepper
method
1. Put the onions, tomatoes and mushrooms into an ovenproof dish. Arrange the chops on top of the vegetables, place a knob of butter on each and season with salt and pepper.
2. Cook in the oven at 200°C (400°F) mark 6 for 45 minutes or until the chops are tender.
