1. Cut the crusts off the bread, break the bread into small pieces and moisten with the chicken stock. Finely chop the water chestnuts. Separate the eggs.
2. Squeeze any excess moisture from the bread and mix it with the prawns, water chestnuts, salt, ginger, flour and egg yolks. Whisk the egg whites until stiff, fold them into the prawn mixture and shape into small balls.
3. Heat the oil to 180 c, 350 f in a deep frying pan. Fry 6 fritter^ at a time, making sure that they do not touch each other. Turn occasionally for 4-5 minutes until the fritters are golden brown.
4. Drain them on absorbent paper and keep hot until all the fritters are cooked.
Serve with: Carrot Salad with Oranges or Mushroom Salad
