800 g (1 3/4 lb) boned and skinned chicken
1 ripe avocado
225 g (8 oz) black grapes
2 seedless mandarins lettuce leaves
2 tablespoons mayonnaise
3 tablespoons crime fraiche
1 tablespoon dry sherry
3 tablespoons orange juice
salt
50 g (2 oz) walnuts, chopped, to garnish
method
1. Cut the meat into equal slices. Halve the avocado, remove the stone, peel each half and slice crossways.
2. Halve the grapes, peel them if preferred and remove the pips.
3. Peel the mandarins and remove the skin fromeach segment. Wash and dry the lettuce.
4. Line a salad bowl with lettuce and fill the bowl with a mixture of the chicken, avocado, grapes and mandarins.
5. Beat the mayonnaise with the creme fraiche, sherry, orange juice and a pinch of salt, pour the dressing over the salad and sprinkle with the chopped nuts.
