1. Rub the inside of the chicken with salt. Cut the apple into wedges and remove the core. Cut the onion into wedges. Stuff the chicken with the apple and onion and secure the opening with wooden skewers.
2. Work the ground cloves, ginger and honey into the soft butter and spread the mixture over the chicken.
3. Roast in a roasting tin on the bottom shelf of a moderately hot oven (200°C, 400°F, gas 6) for 1 hour. After 30 minutes add a little hot stock, if necessary, and baste the chicken with the roasting juices. Ten minutes before the end of the cooking time sprinkle with the almonds.
4. When the chicken is, turn off the oven and leave the chicken to stand for 10 minutes before removing it from the oven and cutting into portions.
Serve with: boiled rice mixed with 1 tablespoon of chopped, preserved ginger and 1 tablespoon of the cooking juices.
