2 medium potatoes, washed and boiled in their skins
4 large cooking (tart) apples, cored and halved
2 medium egg yolks, beaten
1 tbsp chervil, chopped
1 tbsp parsley, chopped
2 sticks celery, chopped
2 tbsp lemon juice
1 tsp wine vinegar
Salt and pepper to taste
method
1. Peel the cooked potatoes and dice them finely.
2. Remove the flesh from the apple halves without breaking the skins.
3. Dice the apple flesh and mix with the potato.
4. Stir in the beaten egg yolks, herbs, celery, lemon juice, wine vinegar and seasoning.
5. Fill the apple skins with the mixture and serve chilled.
