1. Peel and segment 1 orange. Cut the other orange in half lengthways. Peel and segment one half. Squeeze the juice and grate the rind from the other half. Thread the orange and grapefruit segments and the prunes on to four skewers. Place them on a flat dish.
2. Mix together the orange juice, orange rind, oil and vinegar, season with pepper and stir in the mint. Pour the dressing over the kebabs and turn them to coat them thoroughly. Set the kebabs aside for at least 1 hour, turning them occasionally if possible.
4. Place the kebabs under a preheated moderate grill and cook for 6-7 minutes, turning frequently until the fruit is brown. Thread a bay leaf at both ends of each skewer. Serve hot.
Kebabs can also be cooked on a barbecue. These fruit kebabs are also perfect for any vegetarian guests. Turn the kebabs so that they brown evenly.
