2 large baked potatoes
225 (8oz) full cream cheese
110 g (4 oz) spring onions, chopped
1 tbsp parsley, chopped
1 tsp lemon juice
3 tbsp cream or top of the milk
Salt and black pepper to taste
method
1. Halve the baked potatoes and scoop out the flesh.
2. Mash the flesh thoroughly and mix with all the other ingredients.
3. Fill the potato shells with this mixture and place in a hot oven to heat through.
