1. Remove the outer leaves from the leeks and cut into 2.5 cm/1 inch lengths. Wash thoroughly. Place in a pan with the remaining ingredients, adding salt and pepper to taste.
2. Heat gently to simmering point, then simmer for 20 minutes. Leave to cool in the liquid for about 45 minutes, then arrange in a serving dish and garnish with parsley.
