Leeks a la grecque recipe

Preparation time: 10 minutes, plus cooling, Cooking time: 25 minutes, Calories: 63 per portion

ingredients

350 g (12 oz) leeks
juice of 1/2 lemon
1 tablespoon oil
1 tablespoon water
1 garlic clove, crushed
3 tomatoes, peeled and chopped
salt and pepper
chopped parsley, to garnish

method

1. Remove the outer leaves from the leeks and cut into 2.5 cm/1 inch lengths. Wash thoroughly. Place in a pan with the remaining ingredients, adding salt and pepper to taste.

2. Heat gently to simmering point, then simmer for 20 minutes. Leave to cool in the liquid for about 45 minutes, then arrange in a serving dish and garnish with parsley.

Many people still think of leeks as a vegetable to be served hot in the winter. Young leeks are delicious served as a cold starter. You can use the outer leaves, well washed, to give extra flavour to a vegetable stock,
