Hot Dog and Sweetcorn Filling recipe

ingredients

2 large baked potatoes
110 g (4 oz) hot dog sausages, sliced
200 g (7 oz) can sweetcorn, cream style
salt and good grinding black pepper
110 g (4 oz) strong cheese, grated for garnish

method

1. Halve the baked potatoes and scoop out the flesh.

2. Mash the flesh thoroughly then mix in all ingredients except the grated cheese.

3. Pile this mixture into the potato shells and top with the grated cheese.

4. Place in a hot oven to heat through and until the cheese has browned on top.

serving amount

floury potatoes. serves 4
