Scallops with dill and lime recipe

information

Preparation time: 10 minutes, plus chilling, Cooking time: 5 minutes, Calories: 85 per portion

ingredients

juice of 2 limes
350 g (12 oz) queens or scallops
salt and pepper
2 tablespoons chopped dill
1 tablespoon chopped mint
1/4 cucumber, diced
2 teaspoons sunflower oil

For the garnish

lime slices
mint sprigs

method

1. Pour the lime juice into a saucepan, add the queens or scallops, and salt and pepper to taste. Bring to the boil, then simmer for 2-3 minutes, until the shellfish turn white.

2. Remove from the heat and allow to cool. Add the dill, mint, cucumber and oil and place in a serving dish. Chill for 2 hours to allow the flavours to develop.

3. Garnish with lime slices and mint sprigs.

Queens are smaller than scallops and are ideal for starter dishes. Scallops, like oysters, are best when there is an 'R' in the month.
