method
1. Pour the lime juice into a saucepan, add the queens or scallops, and salt and pepper to taste. Bring to the boil, then simmer for 2-3 minutes, until the shellfish turn white.
2. Remove from the heat and allow to cool. Add the dill, mint, cucumber and oil and place in a serving dish. Chill for 2 hours to allow the flavours to develop.
3. Garnish with lime slices and mint sprigs.
Queens are smaller than scallops and are ideal for starter dishes. Scallops, like oysters, are best when there is an 'R' in the month.
