1. Halve the melons and discard the seeds. Scoop the flesh into a bowl, using a melon bailer.
2. Mix with the strawberries or raspberries and add a few cucumber slices and the chopped mint.
3. Moisten with the orange juice and spoon the mixture back into the melon shells. Chill for 2 hours.
4. Top with mint leaves and a sprinkling of grated orange rind, finely chopped pistachio nuts or toasted almonds.
The amount of orange juice depends on how juicy the melons are
