1. Halve the avocado and remove the stone. Score the flesh into small squares with a sharp pointed knife, cutting through almost to the skin. Scoop the flesh into a bowl and sprinkle with 1 1/2 teaspoons of the lemon juice.
2. Peel and core the apple and cut into cubes the same size as the avocado. Soak the sultanas in the remaining lemon juice for 5 minutes. Combine the avocado, apple and sultanas.
3. Mix the curry powder with the yogurt and combine with the avocado mixture. Season with salt and pepper and pile into the avocado skins. Serve immediately.
If you want to prepare the avocado in advance, cover each filled half tightly with cling film and put in the refrigerator to chill. The lemon juice will help to prevent the avocado flesh from discolouring.
