Avocado salad

ingredients

serves 4
4 large lettuce leaves
3 tablespoons oil
4 teaspoons white wine vinegar or lemon juice
salt and pepper
2 avocados
4 tomatoes, peeled and sliced
75 g (3 oz) curd cheese
1 teaspoon finely chopped fresh marjoram

method

1. Arrange the lettuce on four individual serving plates.

2. Blend the oil, vinegar or lemon juice and a little seasoning together.

3. Halve the avocados, peel and remove the stones.

4. Place on the lettuce leaves, cut side down; slice carefully.

5. Arrange the tomato and cheese slices on the lettuce.

6. Top with the dressing and the marjoram. Serve immediately.

If fresh marjoram is not available, replace with 1/2 teaspoonful of dried oregano. The inclusion of curd cheese in this recipe adds protein, making it a good choice for a light meal as well as a starter
