1 lb (450 g) potatoes, mashed
1 lb (450 g) kippers
2 medium eggs, hard boiled (cooked)
2 tbsp parsley, chopped
1/2 stick (2 oz) 50 g butter, melted
salt and freshly ground black pepper
1 medium egg, beaten
Breadcrumbs, fresh
Oil for frying
method
1. Gently steam the kippers between two plates over a pan of boiling water for 5 minutes.
2. Carefully skin, bone and flake the fish and mix with the mashed potato.
3. Chop up the hard boiled eggs, add to the fish and potato mixture together with the parsley, melted butter, salt and pepper.
4. Shape into flat cakes, dip in the beaten egg, then in breadcrumbs and fry in a shallow pan with the oil until golden brown on each side.
