1. Cut the cod fillet into 2.5 cm/1 inch wide strips, sprinkle with salt, leave for 15 minutes.
2. Heat the oil in a frying pan, add the fish and bacon and stir-fry for 3 minutes. Add the remaining ingredients, except the blended cornflour, and bring to the boil.
3. Stir in the blended cornflour and cook for 1 minute.
4. Garnish the finished dish with the spring onion flowers and serve immediately.
Stir-frying requires less fat or oil than other types of frying. It also reduces the cooking time to the minimum. The food retains colour and texture.
