1. Brush a frying pan lightly with oil, add the almonds, then heat and toss until golden; be careful not to let them burn. Drain on absorbent kitchen paper.
2. Put the prawns in a basin with the cornflour, ginger and garlic and mix well.
3. Heat the oil in the frying pan, add the prawn mixture and celery and stir-fry for 2-3 minutes. Add the soy sauce, sherry, water and pepper, and bring to the boil.
4. Add the toasted almonds and heat for 30 seconds, stirring.
5. Garnish with spring onion flowers (see Recipe 96) and serve hot.
Serve a stir-fried vegetable such as Stir-fried Chinese Leaves with this dish. Noodles or plain boiled rice would also make suitable accompaniments.
