Prawns in ginger sauce

Preparation time: 10 minutes,
Cooking time: 6 - 7 minutes,

ingredients

serves 4
8 spring onions, chopped
5 cm (2 inch) piece fresh root ginger, chopped
2 tablespoons dry sherry
2 tablespoons soy sauce
150 ml (1/4 pint) chicken stock
salt and pepper
12 peeled, cooked Mediterranean prawns

method

1. Put all the ingredients, except the prawns, in a saucepan, seasoning with salt and pepper to taste. Bring to the boil, then simmer for 2 minutes.

2. Stir in the prawns, cover and cook for 3 minutes. Serve immediately.

Noodles are the traditional accompaniment to this dish. Cook some fresh egg noodles for 1 minute in boiling salted water.
